FROSTING MIX: Icing Sugar, Cornflour, Flavouring, Colour: Carmine.

Recipe Suggestion 

Strawberry Layer Cake

Ingredients:

•    Green’s Strawberry Cake and Frosting Mix 381g
•    2 Medium Sized Eggs
•    Water: 85ml
•    Fresh Strawberries: 300g, sliced

 

Method:

1. Pre-heat the oven to 200°C (180°C) for fan oven / 350°F. / Gas Mark 6.

Grease the sides and base of 2 x 18cm (7") cake tins and line with baking paper.
2. Empty the sponge mix into a large bowl and add two eggs, 50g of softened butter and 75ml (5 tablespoon) of water.  
3. Whisk together on a slow speed for 30 seconds until the mix is moistened, and then continue to whisk on a high speed for 2 minutes until thick and creamy, if using a balloon whisk or spoon this will take longer. 

4. Pour the mix equally between the two tins and bake in the centre of the over for 15-20 minuets.

5. Once cooked, remove for the oven and allow to cool on a wire rack.

6. Place 75g of softened butter into a large bowl and whisk on a high speed for a few seconds until the butter is fully softened.

7. Add the frosting mix and 10ml (2 teaspoons) of water and whisk on high speed until light and fluffy, and set aside.

8. Wash and slice the strawberries and set aside.

9. Using half of the frosting mix, gently spread over the bottom layer of sponge, add some of the strawberries. 

10. Now take the top layer of sponge, gently place over to sandwich the two sponges together.

11. Take the remaining frosting mix and strawberries to decorate the top.
