Crispy Salt and Pepper Chicken
Ingredients
For the Crispy Coating:
- 300g Chicken Breast/Thigh
- 4 tbsp Borwick’s Cornflour
- 1 tbsp Plain Flour
- ½ tsp Borwick’s Baking Powder
- ½ tsp White pepper
- ½ tsp Salt
- ¼ tsp Garlic powder
For Stir-Frying:
- Vegetable oil for frying
- 1 small onion, finely sliced
- 1 red chilli, finely sliced
- 2 garlic cloves, minced
- 4 spring onions, sliced
- 1 tsp soy sauce
Instructions
1. Prepare the chicken by cutting into bite size chunks
2. In a bowl, combine cornflour, plain flour, baking powder, white pepper, salt, garlic powder, and chili powder. Toss the chicken in this mixture until evenly coated.
3. Heat enough vegetable oil in a large pan for shallow frying. Fry the coated chicken over medium heat until golden brown and crispy. Remove and set on a plate lined with kitchen paper.
4. Remove most of the oil from the pan, leaving approx. 2 tbsp to sauté the onion, red chilli, and garlic until fragrant.
5. Add the crispy chicken and soy sauce back into the pan, and toss gently to coat in the aromatics.
6. Sprinkle with chopped spring onions and serve hot.
Pair with steamed rice or enjoy as a standalone snack.
For a vegan alternative, switch the chicken with tofu.
