Carrot Cake
Ingredients
- Vanilla Sponge 221g
- 2 eggs
- 50g butter
- Water
- Grated Carrots 140g
- ¼ tsp ground ginger
- ¼ tsp mixed spice
- ¼ tsp cinnamon
- 30g pecans
- 20g raisins
Instructions
1) Make up the vanilla sponge mixture as per back of pack instruction.
2) Add grated carrot, spices, pecans and raisins, mix until combined.
3) Place into a lined baking tin and bake for 20-25 minutes, or until golden brown.
4)Leave to cool on a wire rack before enjoying.
(Served well with cream cheese icing!)
